Chili

I have never really followed a specific chili recipe, but thought I’d share the general recipe I try to follow when I am making chili for a cool fall day.

Ingredients:

  • 1 medium red onion, diced
  • 1 lb. ground beef
  • 1 medium green pepper, diced
  • 2 packets chili seasoning
  • 1 can (15.5 oz) chili beans in chili sauce
  • 1 can (15 oz) black beans
  • 1 can (15.5 oz) dark or light kidney beans
  • 1 can (14.5 oz) chili ready diced tomatoes
  • 2-4 cups beef broth (depends upon how thick you like you chili)
  • Optional: 1 pint sliced baby bella mushrooms

Directions:

Place ground beef, one packet of seasoning, onion, and green pepper in large stock pot. Cook until ground beef is cooked through and onions and peppers are soft.

Add remaining ingredients and simmer for several hours.

We like to eat our chili with shredded cheese and either saltine crackers or corn chips. Occasionally, I will add sliced avocado and a dollop of sour cream to my bowl. As a side, honey cornbread or cornbread casserole is also served.
